Chicken breasts in a baking dish (I made 7 breasts). I put a small amount of chicken broth in the bottom (gluten-free, of course). I took 3-4 tablespoons of lemon juice, 5 large cloves of garlic (minced) and 3 tablespoons of dried rosemary and mixed it together with a few dashes of salt. I spread it over the chicken and placed a slice of lemon on each breast. I baked it at 375 for about 40 minutes (the breasts were pretty thick). It was really good and will become a staple. The kids loved it. We used a little of the juice it was baked in to baste it when we cut it but it was already pretty juicy. I made rice with some rosemary in it while it cooked. Then I made broccoli and green beans (for Rik) and hominy (for me and Coop and HG). Cresent rolls and some good ole yummy skim milk! It was a great great meal! From: Jen Maxedon
